Vegan Corn Bread

Excellent vegan cornbread. Adapted (basically removed half the sugar from: https://www.noracooks.com/the-best-vegan-cornbread/)

Ingredients

  • 340 g corn meal
  • 320 g flour
  • 100 g sugar
  • 2 tbs baking soda
  • 1 tsp salt
  • 2.5 cups oat milk
  • 2/3 cup oil

Process

  1. Preheat oven to 400 degrees

  2. Measure and mix dry ingredients

  3. Add oat milk and oil and blend

  4. Spoon into a regular size muffin tray and a mini muffin tray

  5. Bake for 15 minutes
