Easy Recipe Ideas

Last month we had a baby, which definitely makes cooking a bit more challenging. This list has a strong focus on things that can be made quickly and ideally if you suddenly were interrupted won't burn. Also, for the most part, they avoid using the oven because it's summer here in DC and it's not really oven weather.

Dinner

  • Dal and rice with cucumber raita (from Indian-ish)
  • Quick Chana Masala with rice (from Cookie + Kate - I skipped the hot pepper, used less garlic, and used half the amount of tomatoes)
  • Cheesy baked beans (from NYT Cooking - only modification was to do it all on the stove. I served this over tortillas with a side of cilantro, sour cream, and avocado)
  • Green Shakshuka (from NYT Cooking)
  • Fritatta (from NYT Cooking)
  • Coconut Ginger Black Beans (from NYT Cooking)
  • Spicy Corn and Coconut Soup (from NYT Cooking)
  • Chickpea Harissa Soup (from NYT Cooking)
  • Grits and eggs
  • Breakfast tacos (suggest using enchillada sauce from TJs)
  • Asian style Noodle soup (really simple ginger + miso broth with whatever veggies and either eggs or tofu)
  • Veggie burgers
  • Green and Grainy Buttermilk Soup (adapted from Bon Appetit)
  • Ravioli with veggies
