Shortcut Green and Grainy Buttermilk Soup

Bon Appetit published this recipe for Grains in Herby Buttermilk last year. It's very tasty, but I've developed some shortcuts to make it even faster to make.


  • 1 cup 10-minute faro or barley
  • garlic and onion powder
  • salt and pepper
  • 1/2 lemon
  • 1 bunch cilantro (stems are fine)
  • 1 cup buttermilk (could also use 1/2 cup milk and 1/2 cup yogurt)
  • 1/2 cup yogurt
  • 4 eggs
  • hot sauce for serving


  1. Cook barley or faro in 3 cups of water with some garlic and onion powder, salt, and a few slices of lemon zest for 10 minutes (according to the instructions)

  2. While the barley is cooking, blend cilantro, buttermilk, yogurt, salt and pepper in blender until smooth

  3. Soft boil 4 eggs

  4. When barley is cooked, drain and remove the lemon zest. Add the cilantro mixture and return to stove until heated through.

  5. Divide into four bowls and serve with a soft boiled egg. Add hot sauce and lemon juice for taste.
