Bon Appetit published this recipe for Grains in Herby Buttermilk last year. It's very tasty, but I've developed some shortcuts to make it even faster to make.
- 1 cup 10-minute faro or barley
- garlic and onion powder
- salt and pepper
- 1/2 lemon
- 1 bunch cilantro (stems are fine)
- 1 cup buttermilk (could also use 1/2 cup milk and 1/2 cup yogurt)
- 1/2 cup yogurt
- 4 eggs
- hot sauce for serving
Cook barley or faro in 3 cups of water with some garlic and onion powder, salt, and a few slices of lemon zest for 10 minutes (according to the instructions)
While the barley is cooking, blend cilantro, buttermilk, yogurt, salt and pepper in blender until smooth
Soft boil 4 eggs
When barley is cooked, drain and remove the lemon zest. Add the cilantro mixture and return to stove until heated through.
Divide into four bowls and serve with a soft boiled egg. Add hot sauce and lemon juice for taste.
